Gathering green loquats was fun, yesterday. Unripe loquats, used as a vegetable, make a great tasting ingredient in sweet mustard pickles. If they are picked green, one doesn't have any problem with Queensland Fruit Fly (which can be a problem in some areas during fruit ripening time). Chinese food supply and confectionery shops sell delicious tins of loquat cough lollies. Very tasty, tangy and nice. So these greener sour fruits, too, could be stewed into a hard candy.
